is it possible to add conditions such as: do not get caught on camera, if you do, delete the evidence in 2 minutes, to a contract JSON file? if so, how do I do this and is there a list of codes for these conditions?
No, only for offline contracts, not contracts mode.

This is why I love escalations and the crazy conditions that can be thrown in there such as sticky shotgun/hatchet, do not walk on any stairs while carrying the briefcase, no building climbing, body must be found but you cant get spotted, etc etc…

The no briefcase on stairs complication should include NPCs carrying briefcases on stairs not just player.
Another crazy complication could be “If an NPC drops a glass, you will immediately fail”.

Lol just sliding down the pipe from the top balcony in paris chopper side will do just that.
