So it turns out the trees disappear when loading a save, but at least we have duckies :3.
Ooh I was pretty sure I knew what was going on, and turns out I was right.
The easter-egg progress does save! What you probably missed is that only the blossom tree trail from the current stage is visible and you must have completed the easter-egg before saving.

While in Miami (obv) it’s not in the area you mentioned.
Think of the guy that stole the mascot disguise, go towards the sun and up the stairs, and follow the walkway towards the left… You should then see the 2 NPCs smoking by the van and the door that goes into a locker room.
