So, the Dubai elevator shafts don’t have a “death zone” or “hidden body zone”. If a body falls down the shaft without manually pushing them, they fall to the bottom of the game world, still alive.
Also, if you do manually push/dump someone, they automatically die, but you don’t get the “hidden body” notification. (doesn’t really matter anyway, but they do it with other out-of-level push kills)
How does a body fall down a shaft without pushing? Falling from a shot to the leg?
Either a lucky throw that causes their body to stumble down the shaft, or if you drag their body towards the shaft so that most of their weight is in the elevator. If you let go, gravity does the rest.
(this usually causes a fall kill at the Sapienza marina or in other low-ledge areas)
You also can use a fire extinguisher or propane flask to blow them up and make a body fly with the shock wave
Nice! I used the gravity-thingy a few times to get unconscious NPCs to a lower level without killing them. It’s a pretty handy trick 
But not that easy to perform.
Or there is some easy way to do that which I’m unaware about?
Just move the unconcious NPC near a ledge. Usually only need 2-3 tries to make him/her fall down. You just have to switch between grabbing at the hands or the legs and mostly push instead of pulling the body.
I’m doing that (seems) but maybe in a wrong way, and it doesn’t work.
Sometimes I need to waste 5 minutes or so to get it work, that’s why I’m not doing it every day

Tested with some contracts and turns out we can KO people on stairs by the melee moves 47 does of smacking them in the head with his hands and now it won’t get you spotted!
Remember how in H2 you automatically losed Never Spotted when doing this? Well, it’s fixed. Still, it’s safer to do so with NPCs that are going down stairs. With NPCs going up there’s small window during one of the animations where they might be able to spot you.
Me and @eydontactdumb just found out originally, the police in Hunter and Hunted were gonna look different. More like the police from Traditions.

Oh that is because he is strangling Francois. Francois is a dickhead who swipes drugs from the evidence locker and sells them on the streets at a mark up, everyone in the gendarme knows but he is in good with Fournier so there was nothing they could do.
