I completed everything in the normal missions including the escalations. I have not completed the sniper assassin stuff and probably never will though. I’m currently doing a complete run through the entire game from ICA training through Hitman 1 and 2 and ending at Carpathian Mountains. I’m on Haven now and am doing it more to just experience the story without jumping around. After that, I guess I’ll play contracts while I’m waiting for new stuff to release.

I think I’m at… 99% of the items, but 75% of the challenges? Getting everything just feels like a grind, to be honest.
Gosh, Paris sure feels like it has dozens of challenges for no good reason. I kinda appreciate that the new levels have fewer “filler” challenges, but I’m not sure it really matters either way except from a completionist perspective.
I think if they hadn’t of allowed progress transfer I wouldn’t of done the challenges on the legacy levels for a 3rd time, definitely a lot more challenges in Hitman 1 & 2 than there is 3.
I’ve finally done everything throughout all 3 games excluding featured contracts track 2 and the bugged challenges on Mendoza 
good feeling to hit 100% keep at it mate 
H3: Managed to 100% all story chapters, save 1 bugged challenge in Colorado (the one where you drown Sean Rose in the water basin).
Had to redo all mission stories for all levels, since they didn’t transfer over.

What bugged challenges? I’ve got them all in Mendoza. The wine one seems to start working if you restart enough times.
The Vidal sniper mission story doesn’t work for me. This unfortunately makes the Death by Proxy kill impossible
The trophy won’t pop for mastery level 20 and yeah like you say Estate Wines challenge wouldn’t work.
So start the mission and just keep restarting until it works?
Yeah it’s what I did. It was one of the last challenges to complete - and I just kept restarting and grabbing the first one over and over until the challenge started to count 1/3.

Having got to 100% of everything done in HITMAN 2 (Achievements, Challenges, unlocks), my PC died just before Christmas and so rather than continue my 100% H2 profile in EGS HITMAN 3, instead I’m playing the WoA trilogy on Stadia for the time being.
Started playing H1/H2 on Stadia from scratch on 22nd December 2020, and tonight I have finally caught up and 100%-ed* the entire H1-H3 trilogy on my Stadia profile. I am so thankful that they removed some of the crappy H1/H2 challenges from the H3 Access Packs! (Looking at you, kill-all challenges like Three Course Dinner in Santa Fortuna and None Shall Pass in Sgail etc.)
*caveat - my 100% on my new H1-H3 Stadia profile doesn’t include Sniper Assassin challenges/achievements which I did on my H2 PC profile (because quite frankly I don’t really like the game mode!), and I’m still waiting for a fix on the Estate Wines challenge in Mendoza which I’ve experienced the widely reported non-completion bug on.
So yeah, I suppose not totally (because I’m not going back to Sniper Assassin in my H1-H3 Stadia profile), but for all the ‘main game mode’ Destinations I’ve now 100%-ed H1-H2 twice, and H3 once! 
What’s your exact strategy on this one? Start at the wine tasting and keep grabbing the Malbec/Sauvignon?
In my initial run I picked up both of these but not the Pinot, I’ve tried what you said and it hasn’t popped?
I’ve been in the 99.9% club for a few weeks now. Hoping the next update lets me get the challenge for photographing the shiek sleeping.
I’ve save scummed it and taken hundreds of photos and also restarted the mission 5 separate times from scratch for it and not had it trigger.
Playing H2016 and H2 locations within HITMAN 3, I see nobody could achieve complete 100% of the game, because there are quite a lot of bugged challenges there and without completing them it’s impossible to get all 100%
I’m hoping for an extensive amount of bug fixes come Tuesdays update, looking forward to the patch notes dropping.
